Friday Night Dinner with @Minute_Rice #LoveEveryMinute



Friday during Lent as Catholics we don't eat meat. This is challenging for us as a family of 5 {soon to be 6!} since I'm not a huge fan of peirogis and the girls always want pasta.

This past Friday I had a HUGE craving for some flounder so I sent Hubs out to the store for some.

My family is not a huge fan of crazy dishes so I often stick to regular sides I know they like.

We paired our fresh flounder with Minute Rice 



I cannot cook rice to save my life so Minute Rice Instant Rice is my go to rice

I prefer my flounder fried with lots of fresh squeezed lemon on top, white rice cooked in chicken broth and veggies.

Normally I cook my rice in chicken broth instead of water, it gives more flavor. This time I added salt and pepper and a bit of butter to the water since it's Friday and no meat!



As you can see from above I like my fish a little darker when fried. While it's not really a healthy option this is pretty much the only way I eat fish.


Hubs broiled his flounder with butter and lemon and some seasonings. OH MY! It was so yummy!








My kids LOVE rice, I tend to like brown rice much better but the Hubs isn't a huge fan. The kids also love to mix their veggies in with their rice. 

We tend to have rice a lot during the week, it just pairs well with most dishes that we have.
